Cheese with the blue mold "Memel Blue"
"Memel Blue" 45% FIDM is Lithuania’s one and only hand-made cheese with the blue mold Penicillium roqueforti. "Memel Blue" is made from carefully selected cow’s milk, without any dyes or preservatives. The cheese ripening period is six to eight weeks under special conditions, which enable the blue mold culture to grow. Blue mold is distinguished from other mold species by its mild flavour, and gives soft cheese the subtle taste. The "Memel Blue" cheese has a unique structure: white cheese mass is engraved with strings of blue mold. This is a great snack to be accompanied by grapes, olives, melons, and nuts. "Memel Blue" is ideal for white wine or as an ingredient of gourmet salads, sauces, desserts, and other dishes.
